JuliaEver since “My Shanghai” book came into my library during the pandemic, for every gathering of more than four with even a slightest Asian theme I have made these scallion noodles: family gatherings at the shore, potluck dinners at our radio station, children’s parties, dinners at home, some fundraisers. The count is lost.<br> <br> The quantities indicated in the original recipe — “serves two…” really? — have been crossed out in my copy of the book and changed right away. Never once I made this recipe less than quadrupled always stupefied with the final amount: who is going to eat all that considering other dishes? And never once I got to taste these noodles at any of those gatherings. The serving platter would be licked clean almost immediately — the first one.<br> <br> What is so special about this recipe? I don’t know. Just some scallions steeped in oil for an hour or so, soy sauces added, salt, sugar, pepper, some dried shrimp. It is the sort of book Ottolenghi would have read to extend his love of yoghurt-incorporated dishes.</p><p>An excellent book as are all of Arto's. Ganga<p>First book finished for this year (began reading it just before xmas). </p><p>The Art of Fermentation, by Sandor Katz</p><p>1/ 🧵 </p><p>It is a tome (500'ish pages), a must-read for anyone even vaguely interested in fermentation. </p><p>It changed my whole perception of fermentation - 1: it is easier that you think, and 2: it is a life-style that needs attention, and you need to have the time and organisation to be able to do that.</p><p>Woah, so many things to ferment. Ganga<p>Cookbook browsing today.... Part 2</p><p>🌟 My Bombay Kitchen, by Niloufer Ichaporia King</p><p>This book is Parsi food, traditional and modern. Parsis are a Zoroastrian community in India. They are descended from Persian refugees who migrated to India during the Arab-Islamic conquest of Iran in the 7th century, when Zoroastrians were persecuted by the early Muslims. They maintain their own fusion culture, and are part of the wonderful tapestry of food sub-cultures in India.</p><p>Parsi food is very delicious - I have had the fortune to have several vegetarian meals with a Parsi family in Sydney and the food she served was simple but elegant and wonderful. I still have her recipes.</p><p>I have to warn that this book is very meaty. But I have enjoyed quite a few of the vegetarian recipes in the book. Part 1</p><p>Being a Lazy Day, I am browsing 2 cookbooks today.</p><p>The first one I got down from the shelves this morning because of a convo I had yesterday after I posted about the green almonds. I wanted to check some things. It is a book of Lebanese preserves.</p><p>🌟 <a href="https://mastodon.au/tags/Mouneh" class="mention hashtag" rel="nofollow noopener noreferrer" target="_blank">#<span>Mouneh</span></a>, by Barbara Abdeni Massaad</p><p>This is the most beautiful of books, large, glossy, beautiful photos, full of stories of life in Lebanon, and full of recipes. I adore it, and it is beautiful to browse today and read more of the stories. They include personal stories of past strifes in Lebanon and how it impacted family life. There will be quality time spent with this book today.</p><p>You can tell I adore this book.
