Jeg har delt en workshop (på dansk!) kaldet 'Fermentation 101' for at fejre efterårsjævndøgn, arrangeret af den fantastiske @___earthweaver i den fortryllende @skovhaven_byaugusta.
Fælles luksus: Grøntsager fra Mosegården jordbrug blev høstet fra markerne om morgenen og kom direkte på vores bord.
Det var en fornøjelse at komme tilbage til Jyderup, blot tre måneder efter, at vi sammen fejrede årets længste dag. En stor tak til Elena for din varme gæstfrihed og til alle de kære deltagere.
Dette arrangement gav mig også mulighed for at præsentere uddrag fra en fermenteringszine, som jeg i øjeblikket arbejder på, hvor jeg vil dele mine yndlingsopskrifter.
Mit mål var at dele principperne og den grundlæggende videnskab bag laktofermentering. Jeg tror dybt, at det er den mest tilgængelige, men samtidig vidunderlige indgang til fermenteringsverdenen. Du lærer at forbedre smagsprofilen af dine mest basiske lokale rå grøntsager, og du finder en ny lækker og daglig grund til at længes efter noget sundt for dig. Det er også en måde at få dyb værdsættelse for mysteriet om, hvad naturkulturer har skabt i årtusinder. Laktofermentering er en kur mod ensomhed.

Made cabbage pancakes for Greg and me.

I take shredded cabbage (I use a big peeler and just shred right off a halved cabbage) and two eggs, salt and pepper, a little plain soy milk. Then add in whatever else looks good: chives or green onions, cheese/cheez or bits of protein.

Fry in canola oil on one side with lid on, for about 4 minutes, keep an eye on the bottom. Use a plate to flip when the bottom is ... hollieskitchen.eilloh.net/2024

You want to know the best way to cook cabbage?

And by that I mean just plain cabbage, not flavoured with anything.

I learnt it off Raymond Blanc off the telly.

You quarter the cabbage lengthwise. Then, instead of steaming or boiling, you sit the cabbage in 1cm of simmering water in a pan, sprinkle with salt and put the lid on. Then simmer on a low heat for 10 minutes.

It is the best cooked cabbage.

Oh, I forgot about the #tomatoes - I grabbed about a pound from the various indeterminates. The Romas are about to get ripe! The earliest of them are yellow now.
There’s a goth jay who lives in the big Doug fir in the pasture, and they’re in heaven now that this #sunflower is ripe. Between nice soft sunflower seeds and the scavenged chicken scratch, they must be running out of spots to cache food 😂
The established winter #brassicas are still doing great. No signs of whatever the evil white moths are sometimes laying on them - I think between the chickens and the wasps, they don’t have a chance. Pictured are Brussels sprouts, #cabbage, and #cauliflower.
I’ve got another planting of brassicas coming along in the grow tent inside. The warm weather should turn mild again tomorrow (I’m sorry if it’s 108°f where you live) and I think I’ll start hardening them off soon. Now that I know how tasty the chickens think they are, I’ll plant them in already caged beds. The newest ones are mostly winter cabbage, and I’m betting on a mild enough fall to get a nice late crop.
